Nutty Granola
Served Over plain Greek Yogurt and Nut Milk*
INGREDIENTS
Olive oil to grease baking sheet
1 cup Almonds, chopped
1 cup Walnuts, chopped
1 cup Coconut flakes, unsweetened
1/4 cup Sunflower seeds or Pumpkin seeds
2 Tbsp Chia seeds
2 Tbsp Flax seeds
1/2 Tsp Cloves, ground
1 1/2 Tsp Cinnamon, ground
1 Tsp Pure vanilla extract
1/2 Tsp Salt, pink
1 Egg white
1/4 cup Coconut oil, melted
DIRECTIONS
PREHEAT OVEN TO 350 DEGREES AND GREASE A BAKING SHEET WITH OLIVE OIL. IN A LARGE BOWL, MIX TOGETHER ALMONDS, WALNUTS, COCONUT FLAKES, SUNFLOWER SEEDS, FLAX SEEDS, AND CHIA SEEDS. STIR IN CLOVES, CINNAMON, VANILLA, AND SALT. BEAT EGG WHITE UNTIL FOAMY THEN STIR INTO GRANOLA. ADD COCONUT OIL AND STIR UNTIL EVERYTHING IS WELL COATED. POUR ONTO PREPARED BAKING SHEET AND SPREAD INTO AN EVEN LAYER. BAKE FOR 14 MINUTES, OR UNTIL GOLDEN, STIRRING HALFWAY THROUGH. LET COOL COMPLETELY. SERVE OVER GREEK YOGURT WITH YOUR FAVORITE ORGANIC NUT/SEED MILK (UNSWEETENED ALMOND/CASHEW MILK).
fried Egg Sandwich

INGREDIENTS
Cauliflower sandwich thins (grocery stores and Costco). I keep these in the freezer and then take one out in the morning and pop it in the toaster. If frozen, split the thins with a knife.
Olive oil
Butter
1 egg
Salt and pepper
Optional toppings: Avocado, sour cream, grated cheese, hot sauce, etc.
DIRECTIONS
Toast the cauliflower sandwich thin. Pour olive oil in pan. Crack egg into olive oil, salt and pepper, and fry as desired. Butter sandwich thin when toasted. Place fried egg onto the sandwich thin. Add optional toppings.

These EASY, healthy Ham and Cheese Egg Cups are a low carb grab-and-go breakfast you and your famliy will love!
INGREDIENTS (6 servings)
12 Ham slices
Grated cheese
12 eggs
Salt and pepper to taste

DIRECTIONS
1. Preheat the oven to 400 degrees.
2. In a mixing bowl, whisk together eggs, milk (or cream), salt, and pepper until beaten.
Poor eggs into a large measuring cup.
3. Lightly mist 12 cups in a muffing tin with cooking spray or muffin parchment paper. Press a slice of ham into each cup of the muffin tin, arranging the edges to form a ham cup.
4. Add shredded cheese into each ham cup (fills the ham cup about 1/4 to 1/3 full).
5. Pour the egg mixture evenly into the ham cups (about 1 beaten egg per cup). Place the tin in the oven and bake for 18-20 minutes until the eggs are set.

1 cup Bulletproof coffee (brewed)
1 tsp to 2 T Brain Octane C8 MCT oil
1-2T grass-fed, UNSALTED butter (i.e. Kerrygold butter) or 1-2 tsp grass-fed ghee
TIP: IF YOU ARE NEW TO MCT OIL, START WITH 1 TSP AND BUILD UP TO THE FULL SERVING SIZE OVER SEVERAL DAYS (GI DISTRESS). YOU CAN ALSO ADJUST THE AMOUNT OF BUTTER (OR GHEE) TO FIND WHAT WORKS FOR YOU.
DIRECTIONS
1. BREW 1 CUP (8-12 OUNCES) OF COFFEE.
2. ADD COFFEE, BRAIN OCTANE MCT OIL AND BUTTER OR GHEE TO A BLENDER.
3. BLEND 20-30 SECONDS UNTIL IT LOOKS LIKE A CREAMY LATTE.
TIP: If you do not own a blender, add all the contents to a large mug and use a milk frother until the concoction is mixed and creamy.
